Borneo’s Paradise at Nexus Resort

With eight restaurants and bars, Nexus Resort Karambunai is a veritable hotspot of culinary delights that is sure to whet your appetite. From starters to main courses and desserts, the chefs of Nexus Resort have created a delectable variety of mouth-watering cuisine featuring Asian and international flavours from around the world.

“Taste of Borneo Paradise”, published in 2007 by Nancy Koh, is a collection of recipes by local and international chefs from the major hotels in Kota Kinabalu. Twenty-two recipes featured in the book were by the chefs of Nexus Resort. After its successful launch in Kota Kinabalu, the book is now being distributed throughout Malaysia and Singapore.

A follow-up to this effort is the soon-to-be-released “Borneo’s Hidden Treasures” which will once again feature the culinary talents of Nexus Resort among others.

Borneo’s Hidden Treasures encompasses the way of life, traditional activities, special events and the different types of food, particularly ancient recipes (and perhaps forgotten) of Sabah’s uniquely varied peoples from different ethnic backgrounds. An exciting twist to the book would be its spin-off television series which will take modern-day chefs out of their kitchen to whip up dishes using traditional raw materials found in markets, farms, rivers, oceans and the land itself. Eight half-hour episode with be taped for the television series which has attracted the interest of several food channels to air.

Borneo’s Hidden Treasures, in book form targets both the tourist market and locals alike who should find the book an ideal gift or souvenir for friends and family. The book, initially to be printed in English and Chinese, will also be printed in Korean and Japanese.

As a precursor to the launch of this new recipe book, a special Cooking Demonstration where six of the recipes in “A Taste of Borneo Paradise” will be presented to you during a book signing session of the said book by Nancy Koh.

The six recipes are “Latino” Roasted Chicken on Yam Root Puree, Pan Seared Lamb Rack, Chocolate Macadamia Nut Mousse, Crystal Chicken and Prawn Dumplings, Tropical Lobster Salad with Tomato Tartare and Confection of Yam with Santan Creme Anglaise.
